Avocado Egg Stacks

As Ryan has mentioned in his post, we are so excited to be starting this blog! We’ve been talking about it for a few months now, and what better time to start it than at the beginning of summer? Respectively, my first post will be about something near and dear to my heart; Breakfast.

I absolutely love cooking, baking, and just experimenting in the kitchen. When I’m not in the kitchen, you can probably find me at a coffee shop, ice cream stand, or a restaurant (yep, I love to eat). The following dish is one I came up with driven by my hunger and creativity.

I present to you, Avocado Egg Stacks!!!

Looks good, right? WRONG. This dish is FANTASTIC and a wonderful way to start your day! Now your eyes do not deceive you. Yep, underneath that scrumptious salsa, egg, and avocado is a waffle. "But Emma! Why didn't you use something NORMAL like toast or an English Muffin?!" Hey, the waffles I had in my freezer were screaming to be eaten. And don't judge me for using frozen waffles. I'm all about homemade eats but sometimes you need something quick to grab in the mornings. I'm not perfect, people.

A fairly simple recipe, this dish is full of flavor and also gives you an amazing energy boost with a healthy balance of carbs, protein, and fat. Feel free to experiment with a different protein, starch, and toppings as you make this!

Ingredients:

  • 2 Frozen Waffles

  • ¼ Avocado

  • 2 Eggs

  • Salsa (as much as you’d like!)

  • Paprika

  • Coconut Oil or cooking spray

Directions:

  1. Throw those waffles in the toaster/toaster oven and let those babies cook.

  • While your waffles are toasting, prepare the avocado. Cut it in half, take one of the halves, then cut that in half. You only need ¼ of the entire avocado for this dish, but you can certainly add more if you’d like!

  1. Get your waffles (toast them as long as you’d like) and place them on your desired plate for eating. Spread the avocado on the waffles.

  2. Sprinkle some paprika on the avocado (again, as much as your hearts content).

  3. Now it’s time to cook your eggs! But first…please please PLEASE coat the pan so your eggs don’t stick and create a mess (I used coconut oil, but you can use whatever you’d like, such as cooking spray, olive oil, vegetable oil, etc.). Crack the eggs into the pan. When the bottoms of the eggs are cooked through, CAREFULLY flip them over to cook on the other side. I say carefully because you don’t want to break the yolk. There is nothing more satisfying than breaking into an egg yolk with your fork as you eat and see that liquid gold drip onto your food and plate...BASICALLY, you want the egg whites firm, but the yolk runny.

  4. Once your eggs are cooked, place them on top of your avocado waffles. Finally, add as much salsa as you’d like (I used pineapple salsa and it was the best decision of my morning).
