Chocolate PB Cookies
In my opinion, there is no greater love than the holy matrimony of chocolate and peanut butter. Whether you're eating it in cookie form, Reese's form, or 'peanut butter on a spoon, a handful of chocolate chips' form, the combination is positively perfect. So, to all my choco pb fans out there, this recipe is for you!
The recipe can be found on our Pinterest Page. NOTE: this is NOT my original recipe. The recipe is from a blog called 'Baking and Mistaking.' To be honest I discovered this blog about three years ago and only clicked on it because of the adorable name...but I'm SO glad I explored it!! There are so many recipes for tasty treats, including a Chocolate Braid, Pumpkin Whoopie Pies, and Cookie Dough Filled Brownies (um.....YUM!!!). Take some time to explore the page, and I promise you will NOT regret spending an hour looking at desserts like I did!
Ingredients: 3/4 cup confectioners' sugar 1 cup peanut butter 1/2 cup sugar 1/2 cup packed brown sugar 1/2 cup (1 stick) butter, softened 1 tsp vanilla 1 egg 1 1/2 cups flour 1/2 cup cocoa powder 1/2 tsp baking soda
First, preheat your oven to 375 F
For the filling: Mix 3/4 cup of the peanut butter and powdered sugar together.
Using a 1/2 tablespoon, scoop the filling up to make balls.
Place them on a baking sheet then pop them in the freezer while you make the cookie.
For the cookie: Beat the butter, sugars and peanut butter together until mixed. Add in the vanilla and egg and beat to combine. Gradually add in the flour, cocoa powder and baking soda until blended. Remove the peanut butter centers from the freezer, and shape the cookie dough around the ball until completely covered. Flatten the cookies with a glass. Bake for 10 minutes, or until tops of cookies just begin to crack.
