Cinnamon Spice Energy Bites
Two things...one, in exactly one week, it will officially be spring! Warm weather is right around the corner! Two, after multiple experiments, I created a great recipe for energy bites!
For the last year or so, I have seen these around on Instagram and Pinterest. I've never been particularly interested in them until I really started reading the recipes and realized they are fairly simple to make. Plus, there's no baking involved so that's always a plus!


This recipe is very versatile. You can add any spices or flavorings to it to make it your own. After a few recipe trials, this cinnamon spice flavor one was definitely my favorite.
Ingredients:
2 cups oats
1 banana
2 Tbsp almond butter***
2 Tbsp almond milk
Spices (to preference):
Cinnamon
Nutmeg
Ginger

***I've been quite obsessed with Justin's Almond Butter. If you haven't tried it, I highly recommend it!
Directions:
Throw all the ingredients into a food processor. If you've been keeping up with our Instagram account, you may have seen that I got a food processor for Christmas and I am IN LOVE with it!

Once you have blended the ingredients for about a minute (it should stick together) scoop out the batter using a tablespoon and roll into balls.

After, you can roll them into a topping of your choice! I used a mix of chia and flax seeds (or what my sister calls it, bird seed). Some other topping ideas include coconut, cacao nibs, and lemon zest.
I usually pack these in my lunch and eat about 2 or 3 for a pick me up snack. Surprisingly, they do give me a boost of energy and help me power through the rest of my day.
